Intercooler size?
You choose the biggest intercooler core you can fit. More cooling surface means more oxygen which in turn means more potential engine power / combustion.
One or two intercoolers?
If you are short on space or two turbo units, sometimes two intercoolers can be an option. Choose as large as you can fit for the best cooling / engine power. If you use two intercoolers, there will be more piping and maybe also more joints.
